Bowl of creamy dip garnished with roasted garlic cloves and rosemary, served with slices of crusty bread on a dark table with candles and a green cocktail in a large glass.

Rosemary & Garlic Whipped Feta

Roasted Garlic · Rosemary · Honey

Creamy, salty feta whipped until silky and topped with golden roasted garlic, fresh rosemary, olive oil, and a touch of honey. Serve it warm-ish with grilled bread and watch it disappear.

Serves: 6–8
Prep: 10 minutes
Cook: 20–25 minutes

Ingredients

  • 8 oz feta cheese, crumbled

  • 4 oz cream cheese, softened

  • 3 tbsp extra-virgin olive oil, divided

  • 1 whole head garlic

  • 1 tbsp fresh rosemary, finely chopped, plus more for garnish

  • 1–2 tbsp honey

  • ½ tsp freshly cracked black pepper

  • Pinch of red pepper flakes, optional

  • Flaky sea salt, to finish

  • Baguette or crusty bread, sliced

Make It

Heat the oven to 400°F.

Slice the top from the head of garlic to expose the cloves. Drizzle with 1 tablespoon olive oil, wrap loosely in foil, and roast for 20–25 minutes, or until the cloves are golden and soft. Let cool slightly, then squeeze the roasted cloves from their skins.

Add the feta, cream cheese, 1 tablespoon olive oil, half of the roasted garlic, and black pepper to a food processor. Blend for 1–2 minutes, scraping down the sides as needed, until light, smooth, and creamy.

Spread the whipped feta into a shallow serving bowl. Top with the remaining roasted garlic, chopped rosemary, remaining olive oil, and a generous drizzle of honey. Add red pepper flakes if you want a little heat and finish with flaky salt.

Brush the baguette slices lightly with olive oil and grill or toast until golden and charred around the edges. Serve warm alongside the feta.

Midnight Move ✦

Warm the honey with a small sprig of rosemary for a few minutes before drizzling it over the feta. You'll get rosemary throughout the dish without overpowering it.

Pairs with: 🌿 Garden Margarita — cucumber, basil, and lime.

A festive dinner with roasted chicken topped with blackberries and herbs, surrounded by side dishes, a glass of red wine, and a lit candle in a cozy, decorated setting.

Blackberry Blackened Chicken

Blackberry · Balsamic · Rosemary

Golden pan-seared chicken finished in a rich blackberry-balsamic sauce with rosemary, garlic and a touch of honey. Sweet, savory and just a little unexpected—the kind of dinner that looks impressive by candlelight but comes together in one skillet.

Serves: 4
Prep: 10 minutes
Cook: 25 minutes

Ingredients

For the chicken

  • 4 boneless, skinless chicken breasts or thighs

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 1 tsp kosher salt

  • ½ tsp freshly cracked black pepper

  • ½ tsp garlic powder

  • ½ tsp dried thyme

For the blackberry balsamic sauce

  • 1½ cups fresh blackberries, divided

  • ⅓ cup balsamic vinegar

  • 2 tbsp honey

  • 2 garlic cloves, minced

  • 1 small shallot, finely chopped

  • ½ cup chicken broth

  • 1 tbsp fresh rosemary, finely chopped

  • 1 tbsp butter

  • Salt and black pepper, to taste

  • Fresh rosemary for garnish

Make It

Pat the chicken dry and season both sides with salt, pepper, garlic powder and thyme.

Heat the olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add the chicken and sear for about 5–7 minutes per side, depending on thickness, until deeply golden and cooked to an internal temperature of 165°F. Transfer to a plate and loosely cover.

Reduce the heat to medium. Add the shallot to the same skillet and sauté for about 2 minutes. Add the garlic and rosemary and cook for another 30 seconds, just until fragrant.

Add 1 cup of the blackberries, balsamic vinegar, honey and chicken broth. Use a wooden spoon to scrape all those browned bits from the bottom of the skillet.

Gently crush some of the blackberries as the sauce cooks. Simmer for 6–8 minutes, until the berries soften and the sauce becomes glossy and slightly syrupy.

Reduce the heat to low and stir in 1 tablespoon butter. Taste and adjust with salt, pepper or a little extra honey if needed.

Return the chicken to the skillet and spoon the blackberry-balsamic sauce generously over the top. Add the remaining ½ cup fresh blackberries and let everything warm together for another minute or two.

Finish with fresh rosemary and serve straight from the skillet.

Midnight Move ✦

Save some of the blackberries for the very end. The cooked berries create that gorgeous jammy sauce, while the fresh ones burst when you eat them and keep the dish from becoming overly sweet.

For an extra restaurant-style finish, add 1 teaspoon of fresh lemon juice to the sauce just before serving. That little bit of acidity wakes everything up.

Serve It With

I’d put this over creamy garlic mashed potatoes with roasted Brussels sprouts or broccolini on the side. The potatoes catch that blackberry-balsamic sauce beautifully.

Pairs with: 🌙 The Midnight Margarita — blackberry, lime & reposado tequila.

Three grilled chicken tacos topped with cilantro, crumbled cheese, and pickled red onions, served with lime wedges and a pineapple margarita with a salted rim and cucumber slice, on a rustic table with a candle and flowers in the background.

Midnight Street Tacos

Citrus Chicken · Charred Onion · Avocado Crema

Smoky citrus-marinated chicken tucked into charred corn tortillas with creamy avocado-lime crema, pickled red onion, cotija and plenty of fresh cilantro. Built for passing around the table with margaritas in hand.

Serves: 4–6
Prep: 20 minutes + marinating
Cook: 15 minutes

Ingredients

For the citrus chicken

  • 1½ lbs boneless, skinless chicken thighs

  • ¼ cup fresh orange juice

  • ¼ cup fresh lime juice

  • 2 tbsp olive oil

  • 3 garlic cloves, minced

  • 1 tsp ground cumin

  • 1 tsp smoked paprika

  • 1 tsp chili powder

  • ½ tsp dried oregano

  • 1 tsp kosher salt

  • ½ tsp black pepper

For the avocado crema

  • 1 ripe avocado

  • ½ cup Mexican crema or sour cream

  • Juice of 1 lime

  • 1 small garlic clove

  • ¼ cup fresh cilantro

  • Pinch of salt

For the tacos

  • 12–16 small corn tortillas

  • ½ red onion, thinly sliced or pickled

  • ½ cup crumbled cotija cheese

  • Fresh cilantro

  • Lime wedges

  • Sliced jalapeño, optional

Make It

Combine the orange juice, lime juice, olive oil, garlic, cumin, smoked paprika, chili powder, oregano, salt and pepper. Add the chicken and toss until thoroughly coated. Refrigerate for at least 30 minutes or up to 4 hours.

While the chicken marinates, make the avocado crema. Blend the avocado, crema, lime juice, garlic, cilantro and salt until completely smooth. Add a splash of water if you'd like a thinner, drizzleable consistency. Refrigerate until serving.

Heat a cast-iron skillet or grill over medium-high heat. Remove the chicken from the marinade and cook for approximately 5–7 minutes per side, depending on thickness, until nicely charred and the center reaches 165°F. Let rest for 5 minutes, then slice into strips.

Warm the tortillas directly over a gas flame or in a dry, very hot skillet until soft with a few charred spots.

Fill each tortilla with citrus chicken. Drizzle generously with avocado crema and top with red onion, cotija and fresh cilantro. Serve with lime wedges and jalapeño if desired.

Midnight Move ✦

Quick-pickle the red onions. Combine thinly sliced red onion with ½ cup hot water, ½ cup vinegar, 1 tbsp sugar and 1½ tsp salt. Let sit for about 30 minutes. That bright acidity cuts through the smoky chicken and creamy avocado beautifully.

Pairs with: 🔥 After Midnight Margarita — pineapple, jalapeño & Tajín.
